What stays local

TODO: this page will list every category of data that stays on the user's Mac and never leaves: messages, emails, contacts, calendar events, wiki, vector store, RDF graph, audio recordings, transcripts, embeddings, model weights.

For each: where it is stored on disk, what encrypts it, who can read it on the same machine, and what happens to it when the user uninstalls.
